Farali Puri for Navratri: Crispy Vrat Puris with Fasting Atta & Rock Salt

Navratri fasting days call for food that is light, satisfying and true to tradition. These farali puris are crisp outside, soft inside and ready in about 30 minutes – made with KuMa Swaminarayan Fasting Atta and KuMa Himalayan Rock Salt.

Ingredients

  • 1 cup (about 130 g) KuMa Swaminarayan Fasting Atta
  • 1 medium potato, boiled, peeled and finely mashed
  • ½ tsp KuMa Himalayan Rock Salt (sendha namak), or to taste
  • ½ tsp KuMa Whole Cumin Seeds (optional – skip if your family does not use jeera on vrat days)
  • 1 green chilli, very finely chopped (optional)
  • 2–4 tbsp water, only as needed
  • Ghee or groundnut oil for frying

Method

  1. In a bowl, mix the fasting atta, rock salt, cumin seeds and green chilli.
  2. Add the mashed potato and rub it into the flour with your fingertips. The potato binds the dough, because fasting flours have no gluten.
  3. Add water a spoon at a time and knead into a soft, firm dough. It should not stick to your fingers. Rest it, covered, for 10 minutes.
  4. Grease your palms and divide the dough into 10–12 small balls.
  5. Roll each ball between two sheets of oiled plastic (or a cut-open zip bag) into a 3–4 inch puri. This stops the delicate dough from tearing.
  6. Heat oil on medium-high. Slide in one puri, press gently with the back of a slotted spoon so it puffs, then flip and fry until light golden.
  7. Drain on paper and serve hot.

Tips for perfect farali puris

  • Dough cracking? Add a little more mashed potato, not more flour.
  • Puris not puffing? The oil is not hot enough – wait until a small piece of dough rises immediately.
  • Soaking oil? Roll slightly thicker and fry on medium-high, not low heat.

What to serve with them

Pair with a simple vrat aloo sabzi (potatoes tempered in ghee with cumin, green chilli and rock salt), a bowl of chilled curd, or sweet kheer. Every family follows its own fasting rules, so leave out any ingredient your tradition does not allow.
